Maltodextrin
Emulsion is a concentrated drink that is added to sugar and carbonated water to make soda and fruit drinks. Oil-in-water emulsions provide flavor as well as turbidity in products such as orange soda. Traditionally, gum arabic has been used to stabilize these emulsions. Starch derivatives (maltodextrin) are used to prevent creaming (phase separation), sedimentation, and loss of taste and turbidity, which is desirable in both concentrate and ready-to-drink.
