Coffee creamer is not an artificial creamer, but a formulated system similar to natural dairy products with advantages such as lower price, longer shelf life, and excellent mouthfeel and physical properties. This composition includes glucose syrup, emulsifier, protein (caseinate), fat (shortening or oil), buffer compounds and flavor and color creating compounds. Carbohydrates act as tissue fillers and must be present to adjust density and viscosity. This should be accomplished by raising the soluble solids without adding undesirable sweetness to the product. For this purpose, glucose syrups with low DE or maltodextrin are used.
